Who loves to eat CHICKEN?       

                Ever since I was a child my favorite food of all time is chicken, I just love it and when it is cooked in different style whether in a special occasion or ordinary event truly chicken dominates the dining table. Apart from the good taste attributes of chicken it also a nutritious food which is high in protein, phosphorus and niacin, and also a good source of iron. The breast is the section with the lowest fat content, in these cholesterol and diet conscious times, it is best to trim chicken of its skin and as much fat as possible. So much for that info, here’s a Chicken recipe that would make you crave for more!!

                                                 Chicken parcel w/honey mustard glaze 

Chicken Parcels with Honey Mustard Glaze

              Preparation time: 35 minutes


              Cooking Time: 20-25 minutes

                            Serves 6-8

              8 chicken thigh fillets

             16 pitted prunes

             8 spring onion, halved

            2 tablespoons flaked almonds

        

  4 rashers rindless bacon, halved lengthwise

        Honey Mustard Glaze

        1 tablespoons brown sugar

       1 tablespoons Dijon Mustard (famous mustard from Dijon, a city in France, sold worldwide)

       1 tablespoon Honey

       15 g butter, melted freshly ground black pepper

How to cook:

1.  Open out each thigh fillet and place 2 prune, 2 pieces of spring onion and a few flaked almonds on each one.

2.   Roll up fillets; wrap a piece of bacon around each one. Secure with toothpicks

3.   Barbeque or grill over a low heat until cooked about 20 minutes. Baste frequently with glaze.

4.   To prepare Honey Mustard Glaze: Blend all ingredients together in a small bowl.

 

Note: Breast fillets can replace thighs in this recipe: reduce cooking time by 5 minutes

Hint: Many combinations of ingredient can be used in a glaze. For a Ginger Honey Glaze, combine 1/2 cup soy sauce, 1/3 cup of honey and 2 teaspoons ground ginger in a small pan. Bring mixture to the boil, stirring constantly. Makes about 3/4 cup.
